Raw Vegan Peanut Butter Ice Cream - 4 Ingredients and No Ice Cream Maker!

You've never had it so good! You can have your ice cream and eat it too!!!  No ice cream maker needed. Well, this technically isn't an ice cream. There is no ice or cream in it! Just fruit, nuts and a little plant milk.


This delicious ice cream is made with everything you see here: frozen bananas, dates, peanut butter (any nut butter will do) and a little plant milk.


Dates are one of the healthiest fruits on the planet! They have a very high sugar content, which makes them perfect for sweetening recipes. Why use sugar, which has no nutritional value? Make sure to store your dates in the refrigerator and to pit them before using them in any recipe.


I like to blend all of my ingredients together in the plant milk BEFORE adding the frozen bananas. This will result in a more evenly flavored ice cream! I'm using a Nutribullet here, which is an excellent blender to make smoothies and shakes.


Next I add the frozen bananas. Make sure to scrape down the sides as the blender or food processor may need a little help.


Yum!!! Delicious and guilt-free in every way!

RAW VEGAN PEANUT BUTTER ICE CREAM:
Prep time: 5 min (plus freezing time over night)
Cook time: 0 min 
Total time: 5 min

Ingredients:
  • 5 very ripe bananas cut into chunks and frozen over night
  • 5 dates pitted
  • 1/4 cup plant milk
  • 1/4 cup peanut butter (can substitute any nut butter or omit)
Intructions:
  1. Add plant milk, pitted dates and peanut butter to blender or food processor. Process until smooth.
  2. Add frozen bananas and process until smooth. Can add in batches as bananas will get stuck. Make sure to scrape down the sides.
  3. Serve right away for soft serve or put into freezer for a few more hours for a harder consistency.
